These cheddar bacon sliced potatoes are such an easy side dish that’s full of smokey cheesy goodness! My family loves us some bacon mashed potatoes and roasted parmesan potatoes (we love all potatoes, who am I kidding?) so I thought, why not put the bacon and cheese together to create the ultimate dish? 

Slicing the potatoes before baking allows them to steam as they bake which makes them fluffy, and subsequently crispy! When you add the cheese and bacon you get another layer – literally – of delicious texture and flavor. 

These sliced potatoes would be a great dish to serve with any picnic food, sandwich, or pulled meat. My husband even enjoys the leftovers with an egg on top for breakfast. See? They’re super versatile!

This side dish is a popular one in my household for two reasons: It’s delicious, and it’s easy to make! You only need a handful of simple ingredients to make a dish that’s bursting with cheesy bacon flavor!

  • Red Potatoes – washed and sliced
  • Onion – sliced
  • Garlic – minced
  • Bacon – thick-cut, cooked and crumbled
  • Cheddar Cheese – sharp and shredded
  • BBQ Sauce
  • Salt and Pepper – to taste

How to Make This Potato Side Dish

Step 1: Preheat and Prep

Preheat the oven to 350 degrees F and lightly grease the bottom of a 9×13-inch baking pan. 

Step 2: Layer Ingredients

Layer the potatoes, onion, garlic, and crumbled bacon in the prepared bacon pan. I did this in two layers to disperse the ingredients evenly. Top the potatoes with cheese and bbq sauce. 

Step 3: Bake

Bake your dish for one hour uncovered, until the potatoes are tender. Watch towards the end to see if the potatoes are starting to brown too much. If so, cover them with foil until they’re done baking.

How do I slice potatoes?

For this recipe, we use red potatoes so they’re easy to slice, but if you’re using a large potato like a russet or Yukon gold, just be careful not to cut yourself! If you need a better grip, use a dish towel to hold the potato with one hand and then cut crosswise into slices. You can choose what thickness you like, but the thinner you cut, the crispier the potato!

Can I grill these sliced potatoes?

Yes, this dish can be made on the grill! Just use a foil pan instead and cover with foil. Cook over medium heat until potatoes are tender. This can vary in time as every grill cooks differently but it took mine about 30 minutes.

How do I store the leftovers?

The potatoes are best enjoyed fresh so I wouldn’t recommend making them ahead of time, but you can certainly store leftovers and enjoy them over the next couple of days. Allow them to cool completely and then store them in an airtight container in the refrigerator for up to three days. Reheat in the microwave and enjoy!

Ingredients

  • 2 1/2 pounds red potatoes washed and sliced into thin slices
  • 1 small onion sliced
  • 3 cloves garlic minced
  • 6 strips of thick cut bacon cooked and crumbled
  • 2 cups shredded sharp cheddar cheese
  • 3/4 – 1 cup bbq sauce
  • salt and pepper to taste

Instructions
