This Maple Roasted Pork Loin with Apples and Onions is a delicious, simple meal that tastes like a holiday meal!!  It’s tender, juicy, and full of flavor!

Apple Pork Loin

This roasted pork loin is where it’s at you guys!!  It’s fancy, but not so fancy you couldn’t serve it as a regular meal which is great for any time of year!!  I wanted to make a meal that was easy enough to serve any time but has a touch of elegance to serve to guests.  This meal definitely fits the bill.

This dish also makes me think of fall and my childhood.  My grandma used to make a pork chop dish similar to this, but like I said I wanted to enhance it a tiny bit by using a boneless pork loin.

You could serve this with my Simple Roasted Green Beans, Easy Parmesan Risotto, and these Savory Pumpkin Rolls to complete the meal.  But if you wanted a more laid back meal, serve this pork loin with apples with a simple side salad or your favorite steamed vegetable.

Main Ingredients for Pork Loin With Apples

PORK LOIN: Obviously, the key is the pork loin itself! It’s best to find a center cut loin that weighs no more than 3 pounds. You won’t have to deal with a bone and it cooks much quicker.

SAUCE: A combination of apple juice, orange juice, maple syrup, and bourbon will ensure that the apple pork loin is tender and flavorful.

APPLES: Go for sweeter apples like Fuji or Gala. Not only do those varieties taste fantastic, but they also hold up when cooked and won’t turn to mush.

ONION: A white or yellow onion will work great. They sweeten as they are roasted and pair well with the boneless pork loin.

How To Make Roasted Pork Loin

Step 1: Prepare the sauce

Mix together the apple juice, orange juice, bourbon, maple syrup, garlic, and cinnamon in a small bowl. Set aside.

Step 2: Sear the pork

Add olive oil to a hot skillet. Sprinkle the pork loin with salt and pepper. Place the boneless pork loin in the hot skillet with the fat cap down. Sear for 5 minutes, then flip. Sear for an additional 3 minutes for each side.

Step 3: Roast in the oven

Place the sliced apples and onions around the pork loin. Drizzle with the sauce and sprinkle with salt and pepper. Put the apple pork loin in the oven and cook at 375 for 50-70 minutes or until the internal temperature reaches 145 degrees F.

Step 4: Rest and serve

After removing the pork loin with apples from the oven, allow it to rest for at least 10 minutes. Then cut, serve with pan juices, and enjoy!

Expert Tips

  • Prep easy ingredients ahead of time. You can prep ahead of time by cutting the onions and preparing the sauce in advance. Both will last in the fridge up to 24 hours ahead of time.

  • Sear all the sides of the pork loin.  This is important because it boosts the flavor and it crisps up the fat cap.  Be sure to brown all sides and end with the fat cap facing up before going into the oven.
  • Add onions first. I like to put the sliced onions in the pan first so they can start to cook before going into the oven.  This will keep them soft and tender.

DO I HAVE TO COVER THE PORK LOIN?

No, searing the pork ahead of time will lock in the juices, which means you can skip covering it! The purpose of covering the meat is to prevent it from becoming dry, but you don’t need to worry about it with this apple pork loin recipe.

CAN I USE A LARGER PIECE OF PORK FOR THIS RECIPE?

Yes, you can. I try to stick to about 2 1/2 – 3 pounds because it is usually ready in about an hour and a half. You’ll need to add 20-25 minutes of cooking time per pound, so you’ll need to plan for that ahead of time.

WHAT CAN YOU DO WITH LEFTOVER PORK LOIN?

Leftover pork loin can be used in many different ways. Add it to tacos, serve it as a sandwich, mix it into a stir fry or cut it into chunks and add it to nachos. Just keep in mind that the flavor is going to be a little sweet, so you’ll want to account for that by adding it to savory foods.

Ingredients

  • 3 cloves garlic minced
  • ¼ cup apple juice
  • ¼ cup orange juice
  • 2 tablespoons maple syrup
  • 2 tablespoons bourbon of choice optional
  • ¼-½ teaspoon ground cinnamon
  • 1 (2.5-3 pound) center cut pork loin
  • 2 tablespoons olive oil
  • salt and pepper
  • 3 large Gala or Fuji apples quartered and core removed
  • 1 small onion sliced

Instructions

  • Preheat oven to 375 degrees F.
  • In a small bowl combine the garlic, apple juice, orange juice, syrup, bourbon and cinnamon. Set aside.
  • Heat a large oven going skillet over medium heat. Season all sides of the pork loin with salt and pepper. Drizzle olive oil in heated skillet then place the pork roast fat cap down in skillet. Sear for 5 minutes then sear remaining sides for 3 minutes. Remove from heat.
  • Add sliced onions to the pan around the pork loin. Add in apples then drizzle with reserved apple juice mixture. Season with salt and pepper then place in preheated oven for 50-75 minutes or until the internal temperature of the pork loin reads 145 degrees F. Remove loin from pan and let rest 10 minutes before cutting to serve. Serve with the roasted apples and drizzle with pan juices.

    Just made this with a few minor variations, including slicing the apples thin; quarter inch thin, and making a final sauce using bacon pepper jelly and bourbon. Otherwise same temp and cookery. Turned out beautifully. Simple but elegant recipe.
