These Blueberry Buckle Bars are bursting full of sweet blueberries and topped with a yummy streusel topping.

Ingredients

  • Crust
  • 1 1/4 cups all purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter
  • 1 egg slightly beaten
  • 3 1/2 tablespoons milk
  • Filling
  • 4 cups blueberries thawed and drained if using frozen
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 cup all purpose flour
  • 1/2 teaspoon ground cinnamon
  • Streusel Topping
  • 1/2 cup all purpose flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons cold butter

Instructions

  • Preheat oven to 375 degrees F. Lightly grease a 9x9 inch baking pan, set aside.
  • In a large bowl combine the flour, sugar, baking powder and salt. Cut in the butter with a pastry blender or two knives until coarse crumbs. Stir in the egg and milk until combined. Pat into prepared pan.
  • In a large bowl combine the blueberries, sugar, lemon juice, zest, flour and cinnamon, stirring gently. Spoon over the crust.
  • For the streusel topping, combine the flour, brown sugar and cinnamon in a small bowl. Cut in the butter with a pastry blender or two knives until coarse crumbs. Sprinkle over the top of the blueberry mixture.
  • Bake for 45 minutes or until the top is golden. Cool completely before cutting into bars.
