Blueberry Buckle Bars

These Blueberry Buckle Bars are bursting full of sweet blueberries and topped with a yummy streusel topping.

- Crust
- 1 1/4 cups all purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons cold butter
- 1 egg slightly beaten
- 3 1/2 tablespoons milk
- Filling
- 4 cups blueberries thawed and drained if using frozen
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 1/2 cup all purpose flour
- 1/2 teaspoon ground cinnamon
- Streusel Topping
- 1/2 cup all purpose flour
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 4 tablespoons cold butter
Preheat oven to 375 degrees F. Lightly grease a 9x9 inch baking pan, set aside.
In a large bowl combine the flour, sugar, baking powder and salt. Cut in the butter with a pastry blender or two knives until coarse crumbs. Stir in the egg and milk until combined. Pat into prepared pan.
In a large bowl combine the blueberries, sugar, lemon juice, zest, flour and cinnamon, stirring gently. Spoon over the crust.
For the streusel topping, combine the flour, brown sugar and cinnamon in a small bowl. Cut in the butter with a pastry blender or two knives until coarse crumbs. Sprinkle over the top of the blueberry mixture.
Bake for 45 minutes or until the top is golden. Cool completely before cutting into bars.
