Ingredients
  • 1 8 oz container sour cream
  • 2/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups peeled and finely chopped Granny Smith apples
  • 1/2 cup chopped pecans
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl combine sour cream, sugar, eggs and vanilla with an electric mixer just until combined.
  3. In a small bowl combine flours, baking powder, baking soda and salt. Add to creamed mixture and stir just until combined. Fold in apples and pecans.
  4. Lightly grease or line a muffin pan. Divide batter evenly among each muffin cup.
  5. Bake for 20-25 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
  6. Drizzle with caramel sauce when serving if desired.
