Creamy Tuscan Chicken

Ingredients

  • 4 boneless skinless chicken breast halves
  • 4 oz cream cheese
  • 1/4 c. water
  • 1/4 c. pesto
  • 2 c. grape or cherry tomatoes my family prefers the grape
  • 1 c. finely shredded italian five cheese blend

Instructions

  • Heat a large nonstick skillet sprayed with cooking spray on medium heat.
  • Add chicken, cover and cook for 5-7 minutes on each side or until meat thermometer reads 165 degrees.
  • Remove from skillet and keep warm.
  • Add cream cheese, water, pesto and tomatoes to skillet. Cook for 2 minutes or until cream cheese is melted, stirring occasionally.
  • Return chicken and spoon sauce over chicken.
  • Remove from heat and sprinkle with five cheese blend. Cover to melt the cheese.
