This Easy Caesar Salad is simply irresistible with its perfect blend of crunch and creaminess. The recipe is made with everyday pantry staples, and features a healthier twist on some traditional ingredients, resulting in a quick, scrumptious, and lighter salad option.

DRESSING½
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons Greek yogurt
- 1 tablespoon milk
- ½ tablespoon lemon juice
- ½ tablespoon Dijon mustard
- 1 small garlic clove, minced
- salt and pepper to taste
- 1 large head romaine lettuce
- garlic croutons, optional
- Parmesan cheese for serving, optional
Combine all dressing ingredients to a small bowl or mason jar; whisk together. Taste and adjust seasoning. Refrigerate for an hour. This step is optional, but I found it developed better flavors.
Tear or chop the romaine into bite sized pieces and place into a large bowl. Pour dressing over the top and toss to combine. Top with optional croutons and extra Parmesan cheese. Serve immediately.
- If you feel it is missing the flavor of classic caesar salad dressing, add a small amount of Worcestershire. It contains anchovies which will give it that umami flavor.
