This Triple Berry Baked Oatmeal is a great way to start off you day!! It's full of fresh fruit and heart healthy old fashioned oats. Plus, it makes great leftovers!!

Ingredients
  • 3 cups old fashioned oats
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 large egg lightly beaten
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon zest
  • 1/2 cup each blueberries raspberries and diced strawberries
Instructions
  1. Preheat oven to 350 degrees F. Grease an 8x8" baking pan and set aside.
  2. In a large bowl combine the oats, sugar, baking powder, cinnamon and salt. Add in the milk, melted butter, egg, vanilla and lemon zest. Gently fold in the berries. Spoon into the prepared baking pan and smooth into an even layer. Bake uncovered for 35-40 minutes or until a knife inserted in the middle comes out clean.
  3. Serve warm with a splash of milk and extra berries, if desired.
Recipe Notes

If using frozen fruit don't thaw.
