Bacon Mashed Potatoes are creamy, fluffy and full of flavor! Studded with crispy bacon, green onions and made ultra decadent with a little cream cheese.
russet potatoes peeled
washed and cut into 1" cubes
chopped green onion
Salt and pepper to taste
Chopped fresh parsley for garnish
Cook potatoes in a pot of boiling lightly salted water until fork tender. (About 15-20 minutes) While potatoes are cooking fry bacon until crispy, cool slightly then crumble or chop, set aside.
Drain potatoes, add in half of the bacon, green onions, cream cheese and 1/4 cup milk. Mash with potato masher or use a hand mixer until you reach desired consistency. If your potatoes seem a little stiff add in more milk. Taste for salt and pepper and adjust accordingly.
Garnish with reserved bacon and chopped parsley, if desired.
