Cinnamon Sugar French Toast Sticks

Ingredients

  • 8 slices thick cut bread (Texas toast)
  • 4 large eggs
  • 1/2 cup (120ml) whole milk or half and half
  • 1 teaspoon vanilla
  • 1/2 cup (100g) sugar
  • 2 teaspoons cinnamon
  • butter for frying

Instructions

  • Cut each slice into 3 equal sticks; set aside. 
  • In a large shallow dish combine the eggs, milk, and vanilla; set aside.
  • In another shallow dish or plate combine the sugar and cinnamon; set aside. 
  • Heat a large skillet over medium to medium low heat.  Add 2 tablespoons butter to melt.  Roll the sticks in the egg mixture (don't let them soak) and add to skillet (be careful not to overcrowd the pan).  Fry until golden on each side.
  • Remove sticks from skillet and immediately roll in the cinnamon sugar mixture.  Serve immediately.  

Notes

  1. You can use regular bread, they still taste the same, it's just the thicker Texas toast helps make them more sturdy and less floppy.
  2. Also, using day old bread that is a little less than fresh is great.  You can lay out the bread overnight to dry out and get day old bread.  I don't always do this but it does help make a more sturdy stick.
  3. Make ahead option: freeze completely cooled french toast sticks in a freezer bag for up to 2 months.  Reheat in a 425 degree F oven for 15 minutes or microwave for 30-40 seconds or until heated through.
  4. Baking option
    1. Preheat oven to 425 degrees F.  Lightly coat a baking sheet with non-stick spray. 
    2. Instead of frying place sticks in a single layer on prepared baking sheet.  Sprinkle with cinnamon and sugar.  Flip sticks over and sprinkle with cinnamon and sugar.
    3. Bake for 15-20 minutes flipping sticks halfway through baking.
