This Maple Roasted Butternut Squash is a great side dish for the holidays! It's healthy, easy to make, and full of flavor!

  • 1 (3lb)(1.5kg) butternut squash
  • 1/2 cup (120ml) maple syrup
  • 1/4 cup (28g) butter, melted
  • 1/2 teaspoon cinnamon
  • cayenne pepper to taste, optional
  • salt to taste
  1. Preheat oven to 450 degrees F (232 degrees C). If you prefer line a large baking sheet with foil for easier cleanup, set aside. 

  2. Peel, seed, and cut the butternut squash into 1/2"-3/4" cubes. (Try to get them all about the same size so the squash cooks evenly.) Place on prepared baking sheet and toss with remaining ingredients.

  3. Bake for 25 minutes stirring half way through cooking.
