These crispy and crunchy sliced potatoes are baked with layers of cheddar and bacon to transform them into the ultimate side dish. Enjoy the fluffy potatoes with onions, garlic, cheese, crispy bacon, and a little bit of BBQ sauce - they’re truly next level!

- 2 1/2 pounds red potatoes washed and sliced into thin slices
- 1 small onion sliced
- 3 cloves garlic minced
- 6 strips of thick cut bacon cooked and crumbled
- 2 cups shredded sharp cheddar cheese
- 3/4 - 1 cup bbq sauce
- salt and pepper to taste
Preheat oven to 350 degrees F. Lightly grease the bottom of a 9x13 inch baking pan.
Layer the potatoes, onion, garlic and crumbled bacon in prepared baking pan. (I did this in 2 layers) Top with cheese and bbq sauce.
Bake for 1 hour uncovered or until potatoes are tender. Watch towards the end if starting to brown too much cover with foil.
Grill: This can be made on the grill. Just use a foil pan instead and cover with foil. Cook over medium heat until potatoes are tender. This can vary in time as every grill cooks differently but it took mine about 30 minutes.
Storage: The potatoes are best enjoyed fresh so I wouldn’t recommend making them ahead of time, but you can certainly store leftovers and enjoy them over the next couple of days. Allow them to cool completely and then store them in an airtight container in the refrigerator for up to three days. Reheat in the microwave and enjoy!
