- Chicken Wings
- 4 pounds of chicken wings
- 2 tablespoons olive oil
- salt and pepper to taste
- Sauce
- 1/2 cup tequila
- 1/2 cup honey
- 1/3 cup lime juice
- Zest of 1 orange
- 2 cloves of garlic minced
- 2 teaspoons salt
- 3/4 teaspoon cayenne pepper
Preheat oven to 400 degrees F. Line a baking sheet with foil and place a cooling rack on top.
Place wings in a large bowl and toss with olive oil, salt and pepper. Arrange on a baking sheet so they have plenty of space between each. (This will ensure crispy wings) Bake for 45 minutes. I also like to broil mine for a few minutes to lightly brown the skin.
While the wings are cooking combine all the ingredients for the sauce in a small saucepan and bring to a boil. Reduce heat to a simmer and reduce the mixture by half. Let cool until ready to use.
When the wings are done cooking place in a bowl and gently toss with the sauce.
Tip: I also like to broil my wings for an extra couple of minutes to lightly brown the skin.
How To Store: These wings are best served immediately when they're done cooking. However, you can store them in the refrigerator in an airtight container for a couple of days. You can also store leftover sauce in the refrigerator to recoat the wings when you reheat them (either at 350 F in the oven for a few minutes, or in the microwave).
