This Berry Baked Oatmeal is the perfect breakfast! It's soft, slightly chewy, easy to make, requires no fancy ingredients, and can be made-ahead!

Ingredients

  • 3 cups (300g) old fashioned oats
  • cup milk
  • ½ cup pure maple syrup
  • cup melted butter
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon, optional but really good
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups (250g) frozen berries

Instructions

  • Preheat oven to 350 degrees F. Grease a 9x13" baking pan; set aside.
  • In a large bowl combine the oats, milk, syrup, butter, eggs, baking powder, cinnamon, salt, and vanilla. Gently fold in the berries. Spoon into the prepared baking pan and smooth into an even layer. Bake uncovered for 30 minutes or just until set or even a little before fully set.
  • Remove from oven and let stand 5 minutes before serving. Serve warm with a splash of milk and extra berries, if desired.

Notes

  • If you would like your oatmeal thicker use a 9x9 baking pan. You can also double the recipe and still bake in a 9x13 baking pan. You will need to add extra time for both.
  • I don't recommend overbaking this oatmeal because it will dry out. If you like nice soft oatmeal bake until the oatmeal is just set and no longer. You can even pull it a little early because it will continue to cook as it rests.
  • Make-ahead: Bake and cool completely. Store in the refrigerator for up to 7 days. Reheat as needed. 
  • Freezer Friendly: Bake and cool completely. Wrap tightly in foil and freeze for up to 3 months. Thaw and reheat as needed.
