Bacon Mashed Potatoes are creamy, fluffy and full of flavor! Studded with crispy bacon, green onions and made ultra decadent with a little cream cheese.

  • 2 pounds russet potatoes peeled washed and cut into 1" cubes
  • 3 strips bacon
  • 1/4 cup chopped green onion
  • 4 oz cream cheese softened
  • 1/4-1/2 cup milk
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish optional
  1. Cook potatoes in a pot of boiling lightly salted water until fork tender. (About 15-20 minutes) While potatoes are cooking fry bacon until crispy, cool slightly then crumble or chop, set aside.
  2. Drain potatoes, add in half of the bacon, green onions, cream cheese and 1/4 cup milk. Mash with potato masher or use a hand mixer until you reach desired consistency. If your potatoes seem a little stiff add in more milk. Taste for salt and pepper and adjust accordingly.
  3. Garnish with reserved bacon and chopped parsley, if desired.
