Ingredients

Salad:

  • 2 cups (350g) cherry or grape tomatoes, halved
  • 1 english cucumber, halved and thinly sliced
  • 1-2 ripe large avocados, quartered and chopped
  • 1/4 of a small red onion, thinly sliced
  • 3 tablespoons chopped cilantro

Dressing:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine or red wine vinegar
  • juice of 1 lime
  • salt and pepper to taste

Instructions

  • Combine all salad ingredients in a large bowl, set aside.
  • In a small bowl combine the ingredients for the dressing. Drizzle over salad and lightly toss. Serve immediately.

Notes

  1. You can substitute the english cucumber for a regular one. Just be sure to peel it and if the seeds are large remove them.
  2. You can substitute the grape or cherry tomatoes with 1 pound of Roma tomatoes, chopped.
  3. Optional add-ins to customize your salad:
    • Add 1/2 of a bell pepper, chopped. The salad in these pictures has a red bell pepper added.
    • 3-4 ounces of feta cheese or 1 cup cubed mozzarella.
    • 2 cups cooked quinoa
    • Fresh corn, or even slightly charred corn.
    • 1 (14.5 oz) can chickpeas, drained.
    • Instead of cilantro try parsley, basil, or even dill.
    • Change out the white wine vinegar for red wine vinegar or balsamic vinegar.

What to serve this Tomato Cucumber and Avocado Salad with:

  1. Simple Marinade for Chicken and grill the chicken (this is so good!!)
  2. Grilled Teriyaki Pork Chops

  6. Slow Cooker BBQ Pulled Pork
