This Leftover Thanksgiving Casserole is all of the delicious flavors of Thanksgiving packed into one incredible dish. Complete with ingredients like turkey, stuffing, mashed potatoes, corn, and cheese.

Ingredients

  • cups (175g) chopped turkey
  • ½ cup (130g) turkey gravy; divided
  • 2 cups (500g) mashed potatoes
  • ¼ cup (60g) sour cream
  • 1 cup (170g) corn, creamed corn, OR green bean casserole
  • 2 cups (340g) stuffing
  • ¾ cup (85g) shredded cheddar or other favorite cheese

Instructions

  • Preheat oven to 400°F.
  • Place turkey in bottom of an 8x8 or 1½ quart baking dish. Top with gravy. Mix potatoes and sour cream together and spread over meat and gravy. Top with vegetable of choice. Top with stuffing. Cover with foil and bake for 25 minutes.
  • Remove foil and sprinkle with cheese. Return to oven for 5 minutes or just until cheese is melted.

Notes

  1. If your potatoes are really dry add more sour cream. Can also add ¼ teaspoon garlic powder. 
  2. If your stuffing is really dry add a little broth to it before adding to the casserole. 
  3. Can replace the gravy with cranberry sauce if desired. 
  4. Can replace the turkey with chicken or ham.
