Slow Cooker White Chicken Chili- this comforting soup is made easy right in your slow cooker!

  • 4 chicken breasts
  • 6 cups chicken broth
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 15 oz cans great northern beans, drained and rinsed
  • 2 4 oz cans chopped green chilies
  • 1 15 oz can hominy, drained and pureed with a little chicken broth(optional)
  • 1 jalapeno minced (remove ribs and seeds for less heat)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Toppings- sour cream avocado, cheddar, tortilla chips, green onion (optional)
  1. In a 6 quart slow cooker combine all ingredients. Cook on low for 8-9 hours or high for 5-6 hours. Shred chicken (you can do this right in the slow cooker if you want or remove, shred then put back into soup) Serve with optional toppings of choice.
Recipe Notes

*I add in the hominy to thicken the soup a little and it adds another layer of flavor. It is completely optional.
*Leftovers freeze well. Just cool the soup before freezing.
