Ingredients

  • 4 boneless, skinless chicken breasts
  • ¼ cup (55g) unsalted butter
  • 1 small onion, thinly sliced
  • cup (135g) fresh or frozen cranberries
  • 2 cloves garlic, minced
  • ½ cup (120ml) water -or- chicken broth
  • zest from ½ of a large orange
  • 1 large orange, juiced
  • ¼ cup (45g) packed brown sugar -or- honey
  • ¼ teaspoon ground nutmeg

Instructions

  • Preheat oven to 350℉.
  • In a large oven-going skillet set over medium heat, melt the butter. Season both sides of the chicken liberally with salt and pepper to taste. Add to the pan and brown on both sides for 2-3 mintues or until lightly browned. Remove to a plate and set aside.

  • Add onion and cook over medium-low heat, stirring frequently for 2-3 minutes or until it starts to soften. Add cranberries and cook for 2-3 minutes. Stir in the garlic. Stir in the remaining ingredients scraping the skillet to loosen any browned bits.

  • Return the chicken to the skillet and spoon the onions and cranberries over each breast. Bake for 10-15 minutes or until the thickest part of the chicken reaches 165℉.
