My sausage hash brown Breakfast Pie is filled to the brim with breakfast sausage, potatoes, 2 types of cheese, garlic, and a special crunchy topping! Hearty and unique, it's a wonderful breakfast option that will fill you up for the entire morning.

- 1/2 pound breakfast sausage
- 1/2 cup chopped onion
- 1 cup chopped spinach
- 1 clove garlic
- 2 1/2 cups frozen hash browns
- 5 eggs lightly beaten
- 1 1/2 cups sharp cheddar
- 1/2 cup cottage cheese
- 1/3 cup milk
- salt and pepper to taste
- 15 Ritz crackers crushed
- 1 tablespoon butter melted
Preheat oven to 350 degrees F. Grease a deep dish pie plate and set aside.
In a large skillet brown the breakfast sausage with the onion until no longer pink. Drain any extra grease if necessary. Add in the spinach and garlic and give it a few stirs to wilt the spinach slightly. Remove from the heat.
In a large bowl combine the hash browns, eggs, cheddar, cottage cheese, milk, salt, and pepper. Add in the sausage mixture and mix well. Spoon into prepared pie plate.
In a small bowl combine the crushed crackers with the melted butter. Spread over the top of the pie and bake for 60 minutes or until a knife inserted in the center comes out clean.
