Ingredients

  • 8 ounces (227g) penne pasta (or other short pasta)

CAESAR DRESSING:

  • ½ cup (112g) mayonnaise
  • ¼ cup (56g) Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon anchovy paste

PASTA SALAD:

  • 6 cups chopped romaine lettuce
  • 4 cups (520g) cooked chopped chicken
  • 2 cups (260g) halved cherry tomatoes
  • cup (35g) shaved Parmesan cheese
  • croutons; optional

Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta to al dente per package directions. Drain and rinse under cold water until the noodles are cool to the touch.

  • In a large bowl, combine the mayonnaise, yogurt, garlic, lemon juice, Worcestershire sauce, Dijon mustard, anchovy paste, and parmesan cheese.
    ½ cup (112g) mayonnaise, ¼ cup (56g) Greek yogurt, 2 cloves garlic, minced, 2 tablespoons fresh lemon juice, 1 tablespoon Worcestershire sauce, 2 teaspoons Dijon mustard, 1 teaspoon anchovy paste

  • Add the remaining salad ingredients and toss gently to coat.
