Enjoy this cinnamon sugar monkey bread made entirely from scratch! Whip up a simple dough and then season it with all the cinnamon-sugary goodness you want. Allow your dough to bake into a fluffy pull-apart bread loaf, and then drizzle it with all the cinnamon roll icing you want!
3 1/2cflourI prefer bread flour but can use all purpose
CINNAMON SUGAR
3/4csugar
3/4cbrown sugarpacked
1tspcinnamon
6TBSPbuttermelted
ICING
1cpowdered sugar
1TBSPmilk
Instructions
DOUGH
In a medium bowl combine 1 1/2 c flour, yeast, sugar and salt. Add warm milk and beat at low speed until well combined.
Stir in butter and eggs. Add in remaining flour and mix well.
Place dough on a lightly floured surface and knead for 10 minutes or place in mixer with a dough hook and knead for 3 minutes on a medium speed.
Let rise until double (about 45 minutes to 1 hour) covered and in a warm draft free place.
After the dough is done rising combine the cinnamon sugar ingredients in a small bowl. Melt the butter in a small bowl.
Grease two loaf pans.
Punch down dough and divide in half. Cut or tear off small pieces of dough. Mine usually vary in size from golf ball to quarter size. Dip each piece in the melted butter then roll in cinnamon sugar. Place in prepared loaf pan. Repeat with other half of dough.
Cover and let rise until double in size.
Preheat oven to 350 degrees and bake for 25-30 minutes or until golden brown.
Cool in pan for 10 minutes before turning out onto a plate to cool completely.
Combine the icing ingredients until smooth and drizzle over loaves.

I have also left these in the pan and drizzled with icing when cooled.
