These quick and easy Korean Ground Beef Bowls will become your new family favorite. Packed with flavor, crunch, and a little spice! This is also a great meal prep option!

Ingredients

SAUCE

  • ¼ cup (60ml) soy sauce
  • 2 tablespoons packed brown sugar or honey
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha or gochujang
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon rice vinegar

MAYO SAUCE:

  • ½ cup (112g) mayonnaise
  • 1 teaspoon sriracha or gochujang
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced

BEEF:

  • 1 pound (500g) ground beef
  • 1 small onion, diced

TOPPINGS:

  • 2 cups hot cooked rice
  • sliced cucumber
  • chopped green onions
  • kimchi
  • sauteed spinach
  • shredded carrot

Instructions

  • Combine all the sauce ingredients in a small bowl; set aside. I also like to get the rice cooking during this time.

  • Combine all the ingredients for the mayo sauce in a small bowl; set aside.

  • In a large skillet brown the ground beef and onion until beef is no longer pink. Drain any grease. Stir in the reserved sauce and simmer for 2 minutes or until the sauce thickens. I also like to prep my toppings during this time.

  • To assemble: place ½ cup of rice on a plate and top with beef mixture and top with desired toppings. Drizzle with a little mayo sauce and enjoy.
