Baked Maple Ginger Carrots

  • 2 pounds carrots
  • 1/4 cup pure maple syrup
  • 2 tablespoons butter melted
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon ginger powder
  • salt to taste
  1. Preheat oven to 400 degrees F.
  2. Peel carrots and cut to 1/4" thickness. Place in 13x9 inch baking dish.
  3. Combine maple syrup, butter, vinegar, ginger and salt. Pour over carrots and cover. Bake for 20-25 minutes or until desired tenderness.
  4. Spoon carrots into a serving dish and pour juices over carrots. Garnish if desired.
