Ginger Maple Glazed Carrots

- 2 pounds carrots
- 1/4 cup pure maple syrup
- 2 tablespoons butter melted
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon ginger powder
- salt to taste
Preheat oven to 400 degrees F.
Peel carrots and cut to 1/4" thickness. Place in 13x9 inch baking dish.
Combine maple syrup, butter, vinegar, ginger and salt. Pour over carrots and cover. Bake for 20-25 minutes or until desired tenderness.
Spoon carrots into a serving dish and pour juices over carrots. Garnish if desired.
