- 6 strips bacon, diced
- 2 large carrots, peeled and diced
- 2 stalks celery, diced
- 1 small onion, diced
- 1 pound (453g) Italian sausage
- 6 cloves garlic, minced
- 3 tablespoons tomato paste
- 1 tablespoon Italian seasoning
- 8 cups (1.89l) chicken broth
- 3 (15.5 ounce) (439g) cans cannellini beans, drained and rinsed
- 1 (14.5 ounce) (411g) can diced tomatoes
- 4 cups (160g) fresh spinach
- 1 cup (235ml) heavy cream
In a large pot, cook the bacon over medium heat until browned and crispy. Remove with a slotted spoon and place on a paper towel lined plate; set aside.

Add the diced carrots, celery, and onion to the bacon grease. Saute until the onion starts to soften then push everything to the side. Add the sausage, breaking it up as it cooks.

Stir in the garlic, tomato paste, and Italian seasoning and cook for 1 minute. Stir in the chicken broth, beans, and diced tomatoes. Cover and simmer for 10 minutes. Remove from heat and stir in the spinach, cream, and reserved bacon.
