Easy  Mushroom Risotto

This rich and creamy Easy Mushroom Risotto recipe will become a staple! It’s made with Arborio rice, mushrooms, parmesan cheese, and a few other simple ingredients.


Veggie Broth | Water | Butter Mushrooms | Onion | Garlic Arborio Rice | White Wine  Parmesan | Heavy Cream  Fresh Parsley

Bring the broth and water to a boil in a large saucepan. Reduce heat to a low simmer and cover.


Saute mushrooms & onion until soft and golden. Season and stir in garlic and cook for 30 seconds. Remove from the pan and set aside.

Add butter and rice.  Cook stirring constantly until translucent around the edges. Add wine and stir until mostly absorbed.  Stir in hot broth and reduce heat. Simmer until liquid  is absorbed.

Add in hot broth and stir gently until the risotto becomes creamy. Remove from heat and stir in the mushrooms, cheese, cream (if using), and parsley.
