Bucatini | Bacon | Onion Garlic | Red Pepper Flakes Diced Tomatoes Pecorino Romano Cheese
Cook bacon, stirring occasionally, until crisp. Then drain on a paper towel.
Cook onion until softened. Stir in garlic and pepper flakes, cooking, until fragrant. Add tomatoes and juice and simmer until thickened. Boil pasta just before al dente.
When sauce has thickened, stir in the bacon, drained pasta, and a splash of pasta water. Serve with freshly grated Pecorino Romano cheese.
NOTE Bucatini is traditionally used, but you could also use spaghetti, linguine, or rigatoni.
