Cheesy Wild Rice with Mushrooms- this is a great fall side dish full of flavor from Parmesan cheese, wild rice cooked in chicken broth and super tasty sauted mushrooms!

  • 1 1/2 cups wild rice blend rinsed
  • 3 cups chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 1/2 cups sliced mushrooms I like baby portabella
  • 1/2 cup finely chopped onion
  • 1-2 cloves garlic minced
  • salt and pepper to taste
  • 1/2 cup grated Parmesan Cheese
  1. In a medium to large sauce pan combine the rice and chicken broth. Bring to a boil then reduce heat to a simmer. Cover and cook for 45 minutes or until rice is tender.
  2. In large skillet heat the olive oil and butter over medium to medium low heat. Add in the mushrooms and onions and cook for 5 minutes or until browned. Add in the rice and garlic and cook for 2 minutes. Taste for salt and pepper. Stir in the Parmesan cheese. Serve immediately.
