Asian Chicken Salad is a quick and easy lunch or dinner that's full of flavor!! Juicy chicken, peanuts, ramen noodles, cabbage and Asian dressing!

Ingredients
  • 2 large boneless skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1 small head cabbage shredded
  • 6-8 green onions sliced
  • 2 packages ramen noodles
  • 2/3 cup bottles Asian dressing
  • 2 tablespoons smooth peanut butter
  • 2/3 cup chopped peanuts
Instructions
  1. In a large resealable plastic bag combine the chicken, soy sauce, vinegar, garlic powder and ginger powder. Seal well and marinate in the refrigerator 6-24 hours.
  2. Remove chicken from bag and cook over medium low heat until no longer pink (about 15 minutes). Lay on a cutting board until cool enough to slice.
  3. In a large bowl combine the shredded cabbage, green onions and ramen noodles. Lay sliced chicken across the top. In a small bowl combine the Asian dressing and peanut butter until smooth. Drizzle over the salad. Sprinkle with chopped peanuts.
