I thought I would bring you one last summertime salad then back to the comfort foods we all look forward to in the fall.

I don’t know about you but I am ready for the fall!!!  Not only for cooler weather but all the flavors and aromas of fall time.  I love the spices used in fall cooking and the wonderful way it makes the house smell.  It’s just so comforting and for some reason, relaxing!

And our summer has been anything but relaxing!  I think we took on too many summer projects we wanted to get accomplished around the house and along with all the other things that happen with kids, the projects just haven’t been going as planned.

But oh well, they will eventually get done 🙂

Now a little about this Asian chicken salad.  It’s quick, easy and full of flavor!  My husband is not a huge salad- for- dinner fan but he loved this!  He even asked for me to make it again!!  I was amazed and thought well it’s one way I can get him to eat some veggies!

It’s starts with marinated chicken cooked then sliced.  The salad is quick to put together and I do it while I am cooking the chicken.  I am using 1/2 of a green head of cabbage and 1/2 of a red head of cabbage just for some color but feel free to just use 1 head.  You could also use a couple of packages of coleslaw mix to speed things up even more.  This Asian chicken salad would also work great to take to a bbq or picnic, just add in the ramen noodles and chopped peanuts just before serving or they may get a little soggy.

Ingredients
  • 2 large boneless skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1 small head cabbage shredded
  • 6-8 green onions sliced
  • 2 packages ramen noodles
  • 2/3 cup bottles Asian dressing
  • 2 tablespoons smooth peanut butter
  • 2/3 cup chopped peanuts
Instructions
  1. In a large resealable plastic bag combine the chicken, soy sauce, vinegar, garlic powder and ginger powder. Seal well and marinate in the refrigerator 6-24 hours.
  2. Remove chicken from bag and cook over medium low heat until no longer pink (about 15 minutes). Lay on a cutting board until cool enough to slice.
  3. In a large bowl combine the shredded cabbage, green onions and ramen noodles. Lay sliced chicken across the top. In a small bowl combine the Asian dressing and peanut butter until smooth. Drizzle over the salad. Sprinkle with chopped peanuts.

If taking this dish somewhere don't add in the noodles or peanuts until just before serving to prevent them from getting soggy.
