These Lemon Brownies are a fun variation of the classic chocolate version! They are chewy and bursting with zesty lemon flavor, like a blend of a lemon bar and a brownie!

- 1¼ cups (260g) granulated sugar
- 2 tablespoons lemon zest
- ½ cup (113g) melted butter
- 2 large eggs + 1 large egg yolk
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla
- 1¼ cups (220g) all-purpose flour
- ¼ teaspoon salt
- 1 cup (165g) white chocolate chips
- ¾ cup (70g) confectioners sugar
- ½ tablespoon fresh lemon juice
Preheat oven to 350℉. Prepare 9x9 baking pan by lightly greasing OR lining with parchment paper. Set aside.
In a medium bowl, combine the sugar and zest by rubbing the zest and the sugar together with your fingers. This will release the oils, making the lemon flavor stronger.
Stir in the melted butter until well mixed. Stir in the 2 eggs, egg yolk, lemon juice, and vanilla just until combined.
Stir in the flour and salt until almost combined. Stir in the chocolate chips just until combined. Spread into prepared pan. Bake for 25-27 minutes or until toothpick comes out with a few crumbs or clean. Cool completely. To glaze: combine the confectioners sugar and lemon juice and whisk until smooth. Spread over cooled brownies.
- STORAGE: Cover and store at room temperature or in the refrigerator for up to 1 week.
- FREEZER-FRIENDLY: Wrap completely cooled brownies BEFORE adding the glaze in plastic wrap and then in heavy-duty foil. Freeze for up to 3 months. Thaw completely before adding the glaze.
