How To Make Lemon Brownies:

This is just a quick overview of the method for these lemon brownies. As always, specific measurements and step-by-step instructions are included in the printable recipe box at the bottom of the post.

STEP 1: Start by combining the sugar and the lemon zest with your fingers. This releases the oils in the zest and adds so much lemon flavor, so I don’t suggest skipping this step.

STEP 2: Stir in the melted butter. Then, stir in the eggs, egg yolk, lemon juice, and vanilla just until combined.

STEP 3: Stir in the flour and salt until almost combined. Stir in the chocolate chips just until combined. Don’t overmix!

STEP 4: Bake brownies until toothpick comes out with only a FEW moist crumbs or clean. Remove and let cool completely before adding the glaze to the top.

ARE THESE BLONDIES, BROWNIES, OR LEMON BARS?

For the most part, these would be considered brownies because blondies are made with brown sugar. Yes, they are blond in color, like blondies, but made more like brownies. Lemon bars have a shortbread crust with a curd-like filling.

HOW TO STORE LEMON BROWNIES?

Cover and store at room temperature or in the refrigerator for up to 1 week. Or before adding the glaze, freeze for up to 3 months.

ARE THESE BROWNIES GOOEY IN THE MIDDLE?

No, they are dense and chewy but not gooey. Bake them until there are a few moist crumbs on the toothpick or until the toothpick comes out clean. Your preference.

Ingredients

  • cups (260g) granulated sugar
  • 2 tablespoons lemon zest
  • ½ cup (113g) melted butter
  • 2 large eggs + 1 large egg yolk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla
  • cups (220g) all-purpose flour
  • ¼ teaspoon salt
  • 1 cup (165g) white chocolate chips
  • ¾ cup (70g) confectioners sugar
  • ½ tablespoon fresh lemon juice

Instructions

  • Preheat oven to 350℉. Prepare 9×9 baking pan by lightly greasing OR lining with parchment paper. Set aside.
  • In a medium bowl, combine the sugar and zest by rubbing the zest and the sugar together with your fingers. This will release the oils, making the lemon flavor stronger.
  • Stir in the melted butter until well mixed. Stir in the 2 eggs, egg yolk, lemon juice, and vanilla just until combined.
  • Stir in the flour and salt until almost combined. Stir in the chocolate chips just until combined. Spread into prepared pan. Bake for 25-27 minutes or until toothpick comes out with a few crumbs or clean. Cool completely. To glaze: combine the confectioners sugar and lemon juice and whisk until smooth. Spread over cooled brownies.

  1. STORAGE: Cover and store at room temperature or in the refrigerator for up to 1 week.
  2. FREEZER-FRIENDLY: Wrap completely cooled brownies BEFORE adding the glaze in plastic wrap and then in heavy-duty foil. Freeze for up to 3 months. Thaw completely before adding the glaze.
