Hamburger Stew is a hearty, delicious bowl of comfort food that is both budget-friendly and freezer-friendly! It is so easy to prepare and tastes even better the next day!

- 1 tablespoon olive oil
- 1 large onion, diced
- 3 large ribs celery, diced
- 8 ounces (225g) mushrooms, quartered
- 1 pound (500g) ground beef
- 4 strips bacon, cut into ¼" strips
- 5 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 4 tablespoons all-purpose flour
- 2 tablespoons tomato paste
- 4 cups (945ml) beef broth/stock
- 1 (14.5 ounce) (411g) can diced tomatoes
- 1 tablespoon Worcestershire sauce
- 2 medium russet potatoes, peeled and diced
- 3 large carrots, peeled and diced
- 1 cup (135g) frozen peas
Brown vegetables with oil in a large stock pot over medium heat until browned and softened. Season vegetables with salt and pepper while browning. Add ground beef and bacon pieces and cook until beef is no longer pink. Drain grease if needed.
Stir in the garlic, bay leaf, and thyme. Stir in the flour and cook for 1-2 minutes. Stir in the tomato paste.
Add the broth, tomatoes, Worcestershire, potatoes, and carrots. Cover and simmer for 30 minutes. Stir in the peas and season with more salt and pepper if needed.
- STORAGE: Store cooled leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stove over medium-low heat. Add in a little more broth if it is too thick.
- FREEZER-FRIENDLY: Freeze completely cooled soup in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator.
