Easy on the wallet Hamburger Stew

This hamburger soup is one of those one-pot wonders everyone needs to have in their back pocket. It’s comfort food made so easy you could do it with your eyes closed, lol!

I usually make this meal when I am not in the mood to cook anything. Or I will make this Tuna Alfredo. Both use pantry staples, which makes life so much easier because you don’t have to run to the store!

Another reason I love making this hamburger soup is because it is very freezer-friendly.

This means you can prepare a large batch, savor it now, and conveniently store leftovers for chilly nights when you long for a quick and satisfying meal.

Let’s Make This Comforting Hamburger Stew!

1. In a large pot, cook up the vegetables. Then add in the meats.

2. Stir in the garlic and other aromatics.

3. Stir in the flour. You can use gluten-free flour as well!

4. Stir in the tomato paste, then add the broth and other veggies except the peas. You will add these after the soup has simmered. Otherwise, they will be overcooked and mushy. My kids hate mushy peas, lol!

Variations!

Feel free to change up the vegetables and use what you have on hand! You could also use green beans, sweet potatoes, or winter squash.

Replace some of the beef broth with red wine for a rich flavor.

SLOW COOKER: Follow the recipe (except for the simmering part), add everything to a slow cooker, and cook on LOW for up to 8 hours. Stir in the peas just before serving.

INSTANT POT: On the saute setting, brown the vegetables and then the meats. Add the remaining ingredients except the flour and peas, and cook on high pressure for 20 minutes. Do a 15-minute natural release, then stir in a cornstarch slurry if you want to thicken it. Boil on saute mode until thickened then stir in the peas.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 large ribs celery, diced
  • 8 ounces (225g) mushrooms, quartered
  • 1 pound (500g) ground beef
  • 4 strips bacon, cut into ¼" strips
  • 5 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 4 cups (945ml) beef broth/stock
  • 1 (14.5 ounce) (411g) can diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 2 medium russet potatoes, peeled and diced
  • 3 large carrots, peeled and diced
  • 1 cup (135g) frozen peas

Instructions

  • Brown vegetables with oil in a large stock pot over medium heat until browned and softened. Season vegetables with salt and pepper while browning. Add ground beef and bacon pieces and cook until beef is no longer pink. Drain grease if needed.
  • Stir in the garlic, bay leaf, and thyme. Stir in the flour and cook for 1-2 minutes. Stir in the tomato paste.
  • Add the broth, tomatoes, Worcestershire, potatoes, and carrots. Cover and simmer for 30 minutes. Stir in the peas and season with more salt and pepper if needed.

Notes

  1. STORAGE: Store cooled leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stove over medium-low heat. Add in a little more broth if it is too thick.
  2. FREEZER-FRIENDLY: Freeze completely cooled soup in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator.
