One Pot Chicken Broccoli and Rice -this easy 30 minute recipe is comfort food made fast! Tender chicken, broccoli cooked just right, fluffy rice and lots of melty cheese!
In a large skillet brown the chicken, onion and garlic with the olive oil. Season with salt and pepper. Cook until no longer pink about 7 minutes. Stir in the rice, chicken broth, milk and broccoli. Cover and bring to a boil. Reduce heat to a simmer and cook for 10-12 minutes or until rice is tender. Remove from heat and stir in 2 cups cheddar. Sprinkle with reserved cheddar and Parmesan cheese.
