This hearty and warming One Pot Lasagna Soup is an easy recipe with all the flavors of lasagna, and none of the messy layering! Each spoonful will serve up the cheese, meat, and noodle components of lasagna with the cozy elements of a chunky soup. This soup, alongside crusty bread and a crisp salad, is a meal the whole family will love.
SOUP: In a large pot or dutch oven brown the ground beef with the onion, garlic, basil, oregano and parsley. Drain any excess grease. Stir in the tomato paste. Add in the remaining soup ingredients and stir well to combine. Bring to a boil. Cover and reduce heat to a simmer. Cook for 20 minutes stirring occasionally so the noodle don't stick to the bottom.
TO SERVE: Ladle into bowls and top with desired cheeses.

Storage:Allow your soup to cool a little bit and then store it in an airtight container in the refrigerator for about 3-4 days.
