This simple carrot cake recipe has a mild spice and a delicious cream cheese frosting. It’s easy to make, has a nice moist crumb, and can be made ahead!
Flour | Brown Sugar | Oil Eggs | Vanilla | Baking Powder Baking Soda | Salt | Cinnamon Nutmeg | Cloves | Carrots Pecans or Walnuts Cream Cheese Frosting Cream Cheese | Butter | Vanilla Confectioners' Sugar
Combine the eggs, sugar, oil, milk, and vanilla. Mix in flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. Fold in grated carrots and nuts.
Next, pour the batter evenly into the prepared pans.
Bake until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting.
Beat all frosting ingredients until light and fluffy. Place a layer of frosting between the two cakes, then frost the top and sides. Garnish with extra chopped nuts.
