Ingredient Notes
HONEYDEW: For the best flavor, use a ripe melon. Don’t choose a honeydew that is super green in color but more of a creamy white/yellow for a ripe sweet melon. Most melons from the grocery store are not ripe and can stand on your counter for 2-3 days to continue to ripen.
CUCUMBER: You can also use English cucumbers, so you don’t have to peel them!
BASIL: To prolong its life, do not store basil in the refrigerator. The cold will turn it brown.

What Is The Easiest Way To Cut A Honeydew?
Start by slicing off each end of the honeydew and then slicing it in half. Using a large spoon, scoop out the seeds and discard them. Place the large cut side down on a cutting board. Starting at the top, slice off the rind, then cut into slices and then into chunks.
Another option is to cut the melon in half, scoop out the seeds, and use a melon baller. This does make a beautiful presentation.

Ingredients
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 4 cups (550g) cubed honeydew melon
- 1½ cups (205g) peeled cucumber batons
- 1 (6oz) (1706) package blackberries
- ⅓ cup (50g) feta cheese
- ¼ cup (6g) chopped fresh basil
Instructions
- In a small bowl, combine the lemon juice, olive oil, and honey. Set aside.
- In a large bowl, combine the honeydew, cucumber, blackberries, feta cheese, and blackberries. Lightly toss with the dressing and serve.
