This mojito fruit salad is fabulous!! A little confession I didn’t even know what a mojito was until I ran across this recipe at iowagirleats. I had to google it and found out it is a drink. I haven’t tried the drink yet but it is on the to-do list as soon as I am not pregnant anymore. But then I guess nursing kicks in and oh well someday right?? Sorry if that was too much information, just rambling 🙂  Anyhoo I think this would be a great fruit salad to take to any bbq, picnic or gathering because it is so light and fresh. Great for those hot days when you don’t want to be weighed down with a lot of heavy food.
Mojito Fruit Salad
Ingredients
- 4 c. chopped watermelon
- 1 lb strawberries quartered
- 1 c. blueberries
- 1 c. red raspberries
- 1/4 c mint chopped (not 1/4 cup chopped mint)
- 1/4 c fresh lime juice
Instructions
- Combine everything in a large bowl and stir gently.
- Let sit in refrigerator for at least 15 minutes before serving.
