Frozen Mango Yogurt

  • Well, springtime is definitely on its way here in Colorado and I am so glad it is!!  We had some pretty warm days this weekend, in fact it hit the upper 70’s.  That is a little warm for this time of year but I am not complaining!  We spent the whole weekend outside and I made some frozen mango yogurt for everyone to enjoy.

    This is a very simple recipe and it only has 4 ingredients.  It is creamy enough that you could replace your ice cream with this fruity and refreshing delight.

    Frozen Mango Yogurt

    Warmer summer days will be coming soon and I know several people will be wanting to shed some of those winter pounds.  I know I a one of them and a good way to start is by cutting out unnecessary treats like, ice cream.  But ice cream is so hard for me to give up because it is so good!  I think if I had to choose my favorite dessert it would have to be ice cream.

    I had to come up with something that would satisfy my cravings and not pack on the pounds.  Thus this frozen mango yogurt was created.

    Now for the stuff I don’t tell the kids!!  It’s a lot healthier for you than ice cream because it is made from greek yogurt so it is packed with protein.  It has no refined sugars, it’s loaded with mango and contains fresh ginger which is a whole powerhouse on its own.  You could leave the ginger out if you don’t have any on hand but I really enjoyed how well it paired with the mango.

    The kids and I really enjoyed this but my husband is not a mango fan so he turned up his nose and passed up this wonderfully smooth and fruity treat.  Oh well, more for me! 🙂

    • 2 cups frozen mango chunks
    • 2 cups greek yogurt
    • 3 tablespoons honey
    • 1 teaspoon freshly grated ginger
    1. Place all ingredients in a blender and blend until smooth.
    2. Scoop into a freezer safe container and freeze 4-6 hours.
    3. Before serving set on counter to soften slightly.
    Recipe Notes

    Can be served without freezing as more of a soft serve.
