If you’d like to see a complete list of what’s coming up this week, be sure to check the bottom of this post for details. If you’re hopping over from Cherished Bliss, welcome!! I’m so glad you stopped by!! I thought I would bring a dessert to the blog hop this year and what screams fall more than apples and caramel! It also has a nice thick layer of crumble or streusel on top (one of my favorite parts!) A few other great fall time desserts are Homemade Banana Pudding Cups, Caramel Apple Pecan Cake, and Skillet Blondie with Bourbon Caramel Pecans. Easy Apple Cake Recipe Fall is finally here in Colorado and I am hoping it will stick around for a while because I am not ready for winter, lol! Things are still really really busy around these parts. I thought for sure once school started I could get back into a routine, BAH, I was wrong! My husband decided to start up his own business in September and I couldn’t be more proud of him for taking that leap. We have been talking about it for quite some time but he finally got the push he needed. But boy the workload has tripled. I am not complaining but with trying to learn some basic secretary skills (something I am not very good at by the way!), raising a family, and trying to keep up with the blog there hasn’t been much time for anything else. But that’s ok. I know the beginning is always rough and a learning process so we just have to remember to be patient and keep trudging through. Do any of you have a business of your own? Please feel free to comment and leave all the suggestions!! But anyhoo, let’s chat about this cake shall we? This cake is super easy, trust me. There are a few steps involved but I promise it’s easy. Add melted butter and vanilla. Stir with a fork to combine. Set aside. SPICED APPLES: In a large skillet cook apples in the butter over medium heat for 5-10 minutes or until tender. Stir in brown sugar, cinnamon, and allspice. Simmer, uncovered until slightly thickened (about 30-60 seconds). Set aside. CAKE: Preheat oven to 350 degrees F. Grease a 9 inch square or round baking pan. Set aside. In a large bowl combine the flour, sugar, baking powder, baking soda, and salt. Add melted butter, egg, buttermilk, and vanilla. Stir just until combined. Spread ½ of the batter in prepared baking pan. Top with spiced apples and ¾ cup of the reserved crumb topping. Top with remaining batter by dropping batter in small mounds and carefully spreading. It will not cover the entire top of the cake and that's ok. Sprinkle with remaining crumb topping. Bake for 35-40 minutes or until a toothpick comes out clean with no wet cake batter. Cool in pan for 30 minutes. Serve with caramel glaze. CARAMEL GLAZE: In a small saucepan heat the butter, brown sugar, and heavy cream over medium heat. Bring to a boil, stirring occasionally to dissolve the sugar. Boil for 1 minute without stirring. Remove from heat and stir in vanilla and salt. Let stand 5 minutes to cool slightly. Recipe Notes For the best flavor when baking with apples choose a couple different varieties. A few of my favorite apples to bake with are Fuji, Gala, Honeycrisp, Pink Lady, and Jazz. Freezer Friendly: Just skip the caramel topping before freezing and wrap tightly in plastic wrap and foil. Freeze for up to 3 months. Thaw completely before drizzling with caramel topping.
