Day two of mason jar gifts and these cranberry chocolate chip pancakes is a good one!! It was inspired by my daughter and a Christmas cookbook she has.
She loves to help out in the kitchen and these mason jar gifts are a perfect way to get kids involved!! They are great DIY gifts to give to a loved one, friend, teacher, or coworker.
They are also great to give to those who have everything already and don’t want extra stuff collecting dust.

About this Mason Jar Gift:
- Feel free to replace the pecans with walnuts or hazelnuts would be great too!
- Complete the gift by giving with a jar of maple syrup.
- I have included a printable recipe card to attach to the jar or you can attach a handwritten one. My oldest daughter helped me write the directions attached to this jar. 🙂 I think it gives it a more personal touch but if you are needing to make several I would definitely go the print-out route.
- When filling, gently tap the jar on the counter after adding each layer to help it settle.
- This jar will keep at room temperature for up to 1 month.

- Quart mason jars and matching lids and rings (I prefer the wide mouth for easier filling)
- Funnel (found in the canning section of your grocery store or hardware store)
- Green ribbon (I found this green ribbon at Wal-Mart)
- Ingredients to fill the jar (included in the recipe card below)
- Printable (below the recipe card) or handwritten instructions to attach to the jar.

Mason Jar Gift Cranberry Chocolate Chip Pancakes
Ingredients
- 2 cups (260g) all purpose flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 cups (470ml) milk
- 2 large eggs, lightly beaten
- 4 tablespoons melted butter
- 1 tablespoon vanilla
- 1 cup (120g) dried cranberries
- ½ cup (90g) semi sweet chocolate chips
- ½ cup (55g) chopped pecans
Instructions
To make pancakes:
- Preheat a griddle over medium-low heat.
- In a medium bowl mix together the flour, sugar, baking powder, cinnamon, and salt. Add the milk, eggs, melted butter, and vanilla. Stir until just barely combined. Add remaining ingredients and stir just until combined.
- Pour 1/3 cupfuls onto hot griddle. Cook until bubbles start to form and it’s lightly browned on the bottom. Flip pancake. Cook for 2-3 additional minutes or until lightly browned.
- Serve with syrup and fresh fruit if desired.
To make mason jar gift:
- In a small bowl combine the flour, sugar, baking powder, cinnamon, and salt. Spoon into a 1-quart mason jar (I like to use a funnel to help keep things cleaner). Gently tap jar on the counter to help layers settle. Layer with the following and in this order: chocolate chips, dried cranberries, and pecans. Seal with lid and attach the recipe card.
