Help, S.O.S. we are snowed in!  Well, it’s not that bad I’m sure we could get out if needed, but there is a lot of snow outside our house!  The kids are home from school again today.  Cabin fever was at an all time high around 3 in the afternoon yesterday— so today I bet it will kick in around 8 o’clock this morning.  Pray for me guys!

It can be really hard to entertain little people for long periods of time and exhausting!  Where do they get all that energy????  My son resorted to running around with a bucket on his head.  Yeah it was that kind of day.  I imagine Lego land will be happening today and that is one thing that does keep them entertained.  Thank goodness!!  Now I just have to keep baby Zilla under wraps so she doesn’ t destroy their peaceful little villages.  🙂

I know another biscuit slider.  Guys, I could not help myself!

They are just too cute so I had to make another sandwich with them.  Come on please tell me someone else thinks they are cute, don’t leave me hangin.  Oh alright, I’m the weird one who thinks food is cute, it’s ok.

And like the BLT Biscuit Sliders they are perfect party food.  Little enough that you don’t get full on one sandwich so you can enjoy all of the other goodies!

Ingredients

  • Biscuits
  • 2 cups all purpose flour
  • 1 tablespoon sugar
  • 3 teaspoons baking powder
  • 1 teaspoons salt
  • 1/2 cup butter cut into small chunks (or freeze slightly then grate with cheese grater)
  • 3/4 cup cold milk
  • Filling
  • 2 cups BBQ pulled pork store bought or homemade warmed
  • 10 dill pickle chips
  • 3 slices sharp cheddar cheese cut into 1/4ths
  • Dijon mustard can also use spicy brown mustard

Instructions

  • Preheat oven to 450 degrees F.
  • In a medium bowl mix together the flour, sugar, baking powder and salt. Add in butter and cut with a pastry blender until you have coarse crumbs. (if you froze and grated, just mix it in no need to make the butter smaller 🙂 ) Stir in the milk until the dough starts to leave the sides of the bowl.
  • Place dough on a work surface and knead lightly 10 times. This will also help to finish mixing your dough together. Roll dough to 1/2" thick and use a 2 1/2" biscuit cutter. Place on ungreased baking sheet and bake for 10-15 minutes or until golden brown. Cool slightly.
  • Cut biscuit in half and spread a small amount of mustard on each half. Put a small amount of pork on the bottom half and top with a square of cheese, pickle and place top back on. Repeat with other biscuits.

    I will have to try them for lunch one of these days. The kids all like biscuits and also pulled pork, so I’m sure they will go for these.

  2. Yummmmmmmmmm to the 10th degree!!! I love everything about this recipe, but in particular, the use of a biscuit for a bun is brilliant.
