Why I Love These Easy Homemade Pancakes

This recipe is a true two-for-one deal! We’ll talk about how to mix up the dry pancake mix that you can keep on hand in your pantry for whenever you have a pancake craving (or for a delicious gift!), but we’ll also see the recipe through to their final form: fluffy flapjacks!

This pancake mix also has the added benefit of being on the healthier side because I used half whole wheat flour and half all-purpose flour. The whole wheat flour really ups the nutrition factor and it still turns out perfectly textured. 

Once your mix is made and you’re ready to start whipping batter, you can just a few simple ingredients and then make it your own! Get creative with your added ingredients; the batter pairs so well with fruit (I personally love blueberry!), chocolate chips (and/or peanut butter chips!), or whatever you desire. 

If you’re in a seasonal mood, you can also add ingredients like pumpkin pie spice, cinnamon, or cardamom. Heck, throw all three in there if you want! The beauty is that these easy homemade pancakes are ready and waiting for you whenever you’re ready. There’s no running out to the store for mix – you already have it!

Ingredients to Make Pancakes From Scratch

I personally like to make a huge batch of this pancake mix so I can keep some in my pantry for easy use! The measurements in the recipe card are for a single batch for your family on a Sunday morning, but feel free to double, even triple, the recipe so you can keep some mix in an airtight container ready to go! 

The only ingredients required for the mix are all-purpose flour (you can replace half with whole-wheat flour), baking powder, baking soda, sugar, and salt. 

Then, when you’re ready to turn them into the pancakes we all know and love, you’ll need to add buttermilk (or milk), eggs, greek yogurt, and some vanilla. 

The final step is to add in the ingredients of your choice to dress your pancakes however you want! But of course, there’s nothing like a classic plain homemade pancake!

How to Make Homemade Pancakes

Mix and cook! That’s it! Start by mixing together your dry ingredients to make your pancake mix, then add all of the batter ingredients until it’s just combined – don’t overmix!

Heat your griddle on medium to medium-low heat, and then ladle the batter onto your cooking surface. Once the pancakes are full of bubbles, go ahead and flip them over to cook for another minute or two. 

Serve them with yummy toppings and enjoy!

What’s the secret to making the perfect homemade pancakes?

In my opinion, the secret is mixing your batter the right amount. You’ll want to combine your dry and wet ingredients only until they’re just combined.

Can I use water instead of milk in my pancake batter?

You can in a pinch, but then I’d definitely add more toppings and seasonings to enhance the flavor. If you’re looking for a dairy-free option, you can always substitute in plant-based milk.

Ingredients

  • Pancake Mix:
  • 8 c. all purpose flour
  • 4 tsp. baking powder
  • 2 tsp. baking soda
  • 3 TBSP sugar
  • 3/4 tsp salt
  • For the pancake batter:
  • 2 c. pancake mix
  • 2 c. buttermilk or milk
  • 2 eggs
  • 1/4 c. greek yogurt
  • 1 1/2 tsp vanilla

Instructions

  • For pancake mix:
  • In a large bowl or container mix all pancake mix ingredients together.
  • For batter:
  • In a large bowl combine all batter ingredients and mix just until combined. Don’t overmix.
  • Heat a griddle on medium to medium low heat.
  • Ladle batter onto griddle and once pancakes are full of bubbles flip over.
  • Cook them for another minute or two.
  • Serve with desired toppings.
