Easy Zucchini Pizza Bites

  • These Easy Zucchini Pizza Bites are a healthier way to fix a pizza craving!  All the pizza flavors without all the extra carbs.

    I made these on a whim the other day and I must say they are delish!  We aren’t huge zucchini eaters other than in muffins or bread.  However, I am trying to change that because zucchini is a healthy vegetable and it’s always in abundance this time of year.

    And this is such a quick and easy recipe!  Easy enough the kids can do most of the work, which in the case of my kids gets them pretty pumped!

    I don’t like soggy veggies and most recipes overcook zucchini —-and we just can’t stomach it.  I don’t know why, probably because I grew up eating crispier vegetables.

    So, I saw most recipes for these Zucchini Pizza Bites were double cooking the zucchini and I knew it was going to be too soggy for our liking.  I thought why can’t you just bake it in the oven for a little bit to melt the cheese and get everything warm?  So, that’s exactly what I did!

    It definitely is a winner in my books doing it that way.  One less step and the zucchini turned out tender crisp.  Plus, all those great pizza toppings on top made this a snack I can make and enjoy with my kids often!!

    These Easy Zucchini Pizza Bites are a healthy way to fix a pizza craving without all the carbs! | Countryside Cravings

    Ingredients
    • 2 small zucchini cut into 1/4" rounds
    • 1 cup spaghetti sauce
    • 1 cup shredded mozzarella cheese
    • 1/2 cup mini pepperoni
    • 3 tablespoons grated Parmesan cheese
    Instructions
    1. Preheat oven to 375 degrees F. Spray a baking sheet with cooking spray.
    2. Place zucchini in a single layer on baking sheet. Top each round with spaghetti sauce, mozzarella cheese, 3 pepperoni and Parmesan cheese.
    3. Bake for 8-10 minutes or until cheese is melted and heated through.
