Almond Granola Bar

These almond granola bars are great for breakfast on the go or just a snack.  Nuts, seeds and oats are held together by almond butter in chewy bars.

I like to keep these granola bars in the refrigerator because I think the hold together a little better, but they don’t have to be.  I like granola bars because they can be so versatile.  You can add combo of nuts and dried fruits that you can think of .  Oh and of course adding chocolate….don’t get me started.  Well have fun playing around with these granola bars by changing them up if you please!!

Ingredients

  • 1 c. old fashioned oats
  • 1/4 c. sliced almonds
  • 1/4 c sunflower seeds
  • 1 c. rice krispies
  • 1/3 c dried cranberries
  • 1/3 c chopped dried apricots
  • 1/3 c raisins
  • 1/4 c creamy almond butter
  • 1/3 c honey

Instructions

  • Preheat oven to 350 degrees.
  • Lightly grease an 8" square baking pan.
  • Spread oats, almonds and sunflower seeds on a large baking sheet. Bake for 10 minutes stirring half way through.
  • Pour into a large bowl and add cereal, cranberries, apricots and raisins. Toss to combine.
  • Combine almond butter and honey in a microwave safe bowl and heat until you can easily combine.
  • Pour over dry ingredients and mix well.
  • Pat into prepared pan with your hands (let mixture cool slightly if needed).
  • Refrigerate until firm and cut into bars.
