Chicken Salad

  • This chicken salad recipe happens to be one of my favorites!  Notice I said MY favorite.  There are sooooo many different kinds of chicken salad out there– so use this as a guideline and if there is something you don’t like swap it out for something else.

    When I think of chicken salad I think of special occasions or social brunches with the ladies.  I don’t know why, I just do.  Maybe because this was the chicken salad that was served at my bridal shower.  Anyway, what I’m trying to say is, if you’re having a ladies brunch this Mother’s Day, serve this!

    This recipe happens to be from my aunt.  She plans and prepares the food at a bed and breakfast in Fort Scott, KS.  It is a very historic bed and breakfast built back in 1876!!  So if you’re in the area (or just need a nice weekend getaway) be sure to tell my aunt hi for me!  Here is their website if you want to check it out Lyons Twin Mansions Bed and Breakfast.

    This Chicken Salad is full of crunchy veggies and sweet grapes surrounded by a creamy dressing.

    Ingredients
    • 1 cup real mayonnaise
    • 1 8 oz package cream cheese, softened
    • 1 tablespoon season salt
    • 3 cups cooked and cubed chicken
    • 3 cups chopped celery
    • 3 cups red or green seedless grapes halved
    • 1 small can water chestnuts drained
    • 3/4 cup chopped green onions
    • 1/2 cup chopped bell pepper
    • Toasted almonds for garnishing
    • Bread of choice
    Instructions
    1. In a large bowl combine the mayonnaise, cream cheese and season salt. Add in the remaining ingredients except for the almonds and gently combine.
    2. Serve immediately as a salad or sandwich--or make in advance (which I think it tastes even better the next day!)
