This Homemade Chicken Salad is not your average one! Full of crunchy fruits and veggies and a special ingredient!
You guys this is the most awesome chicken salad ever!! My husband isn’t a huge fan of chicken salad and he devoured this—- and asked for more!! Me on the other hand can’t get enough chicken salad of any kind, especially this one!!
Now, what puts this chicken salad over the top is the special ingredient which are almonds……………what?!?! Aren’t almonds in almost every chicken salad?!?! Just keep reading…..
These are not just plain almonds, I decided to use Blue Diamond’s Habanero BBQ Almonds. You guys these almonds are were it’s at. They are super addicting too!! <- Just thought I would warn you 🙂
I had a hard time even putting them in the salad because I just wanted to eat them all!! Don’t let the name scare you because they aren’t super hot, just a light kick. And they don’t overpower the salad either but compliment it very well with the sweet apples and grapes. Trust me on this one!!
I also have a chicken salad without the spicy almonds too if you would rather. It’s near and dear to my heart as well and is extra indulgent because it has cream cheese in it!! I would say it’s a fancy chicken salad appropriate for special occasions such as Mother’s Day or bridal showers. Whereas this chicken salad, with the habanero bbq almonds, is great for any day of the week!
Homemade Chicken Salad
Ingredients
- 2 1/2 cups cubed rotisserie chicken
- 1 cup chopped red apple about 1 apple
- 1/2 cup halved red grapes
- 1/2 cup chopped celery
- 1/2 cup chopped Blue Diamond Habanero BBQ Almonds
- 1/2 cup mayonnaise
- season salt to taste
Instructions
- In a large bowl combine all ingredients. Chill in the refrigerator for 1 hour to allow the flavors to combine. Serve on a bed of lettuce or make into a sandwich.
