Christmas goodie #2 is a lemon cheesecake cookie. I must confess these cookies are only semi homemade (AAAHHH GASP) Don’t judge me to harsh but these cookies use a boxed cake mix. I do usually make things from scratch but sometimes it is nice to have some really quick meals or desserts on file. The holiday time can be so crazy and no one has to know you used a cake mix anyway. It will be our little secret!
These lemon cheesecake cookies are a family favorite. We like the chewy texture and the lemon cheesecake flavor. It’s a winning combo and it will be something different to add to your cookie tray to break up all that chocolate. Not that chocolate is a bad thing but we do have some family members that don’t like chocolate (I have no idea why, still trying to figure that one out) so I try to come up with something for everyone. These cookies also have a mood lifting effect I think because they are lemon they just make you think of spring. At least that’s what I do, I love springtime. Wow this is going to be a long winter.
- 1/4 cup butter softened
- 1 8 oz. package cream cheese, softened
- 1 large egg yolk
- 1 package lemon cake mix
- 1 teaspoon vanilla
In a stand mixer or with an electric mixer cream butter and cream cheese in a large bowl. Add in yolk and mix to combine. Add in cake mix and vanilla and mix well. Chill 1 hour.
Preheat oven to 375 degrees F.
Roll dough into 1" balls and place on ungreased baking sheet. With a fork press dough in an X pattern. Bake for 8-10 minutes or until lightly golden.
