  • LEMON CURD – Remember, I swear by my homemade version! That said, if you don’t have time to make it from scratch, you can always go for store-bought options.
  • HEAVY WHIPPING CREAM – Another important ingredient to make your homemade lemon mousse!
  • POWDERED SUGAR – Whip the powdered sugar along with the cream and lemon curd and you’ll have the base of your dessert mousse cups before you know it.
  • SHORTBREAD COOKIES – I highly recommend using Walker’s Shortbread Cookies — they’re addicting in the best way possible.
  • RASPBERRIES – Opt to use fresh raspberries as your garnish.

Instructions to Make Mousse Dessert Cups

Since it only takes a handful of ingredients, these dessert mousse cups are super quick to put together. 

WHIP: In a large bowl, whip your cream with the powdered sugar until stiff peaks form.

ADD THE CURD: Gently fold in 2 tables of lemon curd.

ASSEMBLE THE MOUSSE DESSERT CUPS: Spoon half of the mousse into a dessert cup, then top with 1 tablespoon of lemon curd, 1 crumbled shortbread cookie, and fresh raspberries. Enjoy!

I swear by heavy whipping cream for its fat content and flavor. That said, you can always replace it with coconut cream instead! In fact, it’s a great option if one or more of your guests are dairy-free.

Can I freeze these mousse dessert cups?

I wouldn’t recommend it. Freezing and then thawing these mousse dessert cups will seriously impact their texture. What’s more, the water content in the lemon mousse in particular can lead to ice crystals which will cause a change in consistency. For best results, enjoy these fresh!

Why is my lemon mousse runny?

To keep the lemon curd mousse from becoming too runny, make sure to whip the heavy cream to stiff peaks before folding in the lemon curd. On the other hand, if your dessert mousse cups become too thick, try adding in a bit more whipped cream or a small amount of milk to get your desired texture. But, be careful not to overmix — it will cause the mousse to go flat!

Ingredients

  • 2/3 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1/4 cup lemon curd divided
  • 2 shortbread cookies
  • fresh raspberries for topping

Instructions
