This is the perfect springtime dessert, in my opinion! Lemon is just one of those flavors perfect for spring. It’s light and refreshing sweet and tangy. It would also be great for summer too! Not as heavy and rich as some desserts can be and on a hot summers night no one wants more weight. This doesn’t require a ton of ingredients either. So, besides the lemon curd you will need cream, shortbread cookies (I highly recommend Walker’s Shortbread Cookies… so addicting!!) and fresh raspberries. That’s it!!!! Since it uses only a handful of ingredients it’s super quick to put together! Using lemon curd speeds things up and you can use homemade lemon curd or store bought. I highly recommend making your lemon curd homemade as it just tastes better!! Plus, it can be used in other recipes such as lemon cheesecake overnight oats or blueberry dutch baby with lemon curd. Gently fold in 2 tablespoons lemon curd. Spoon half of the mousse into a dessert cup. Top with 1 tablespoon lemon curd, 1 crumbled shortbread cookie and fresh raspberries.
