Blueberry Oven Pancake

  • If you are tired of standing at the stove flipping pancakes in the morning this is the solution!!!  Just pour the batter in a baking pan and bake!!

    My kids love pancakes.  I think they could eat them for every meal if given the choice.  So cooking pancakes for 5 hungry children can be time consuming.  Baking them in the oven is so much easier.  It frees me up to get other things ready for breakfast like the eggs or bacon.

    Ingredients
    • 1 c. all purpose flour
    • 1 TBSP sugar
    • 3/4 tsp baking soda
    • 3/4 tsp baking powder
    • pinch of salt
    • 1 egg beaten
    • 1 c. buttermilk
    • 2 1/2 TBSP butter melted
    • 1/2 c. blueberries
    Instructions
    1. Preheat oven to 350.
    2. In a bowl, stir together the flour, sugar, baking soda, baking powder and salt.
    3. Add in egg, buttermilk and melted butter.
    4. Stir just until combined.
    5. Spread evenly in a greased 13x9" baking pan.
    6. Sprinkle with blueberries.
    7. Bake for 16 minutes or until set and lightly golden.
    8. Cut into squares and serve with warm syrup.
